Tater Tots Bacon Frittata


· McCain® Tots
· Medium onion – 1/2 nos   · Red capsicum – 1/2 nos
· Tomato – 1 nos   · Mozzarella cheese – 200 g
· Smoked bacon – 100 g   · Eggs – 4 nos
· Sour cream – 1/4 cup   · Milk – 1/4 cup
· Olive oil   · Salt & pepper


· Slice the onion and capsicum in long thin stripes. Dice the tomato.
· In a sauté pan, add olive oil and sauté the onion, capsicum and tomato for 8 minutes with medium heat.
· Cut the bacon into small pieces and add to the pan, cook for another 4 minutes. Reserve.
· Fry McCain® Tots for 2 minutes at 170˚C, add to the vegetables and bacon mix.
· Mix the eggs and cream in a bowl, and season with salt and pepper.
· In a cast iron pan, add the tater tots mix, the mozzarella cheese and pour in the cream and eggs.
· Place in a pre-heated oven at 220˚C for 5 minutes.
· Garnish with fresh parsley and serve.
